Viv’s mug cake

Ingredients

30g self-raising flour
2 tbsp caster sugar
Pinch salt
1/4 cup milk
1/2 tsp vanilla essence/extract
(You can adjust vanilla for other preferred flavours but will need to experiment with quantity) 
1 1/2 tbsp Vegetable oil
Optional – small pinch of baking powder, 1 egg

Method 

Grease mug.
Chuck the lot in a bowl and mix until smooth. Do not over mix. For cup measurements,  use the mug or cup you are making as a guide. 
Microwave for 1 minute to up to 90 secs depending on your microwave.
Check if cooked,  use oven gloves as the mug will be very hot. Test with fork or skewer to test if cake is set. If fork does not come out clean you will need some more time.
If not add a few more seconds Ensure all cooled do not eat hot, -apply caution as microwavable food may appear cool and still be hot on inside.

I do not recommend any fillings as these can super heat and risk remaining very hot. 

Work preferably to the basic cake recipe. You could check reputable websites for other mug cake recipes.

Decorate if desired, when cooked, with sprinkles, nuts, butter cream etc The great thing about this cake is it is light to carry and relatively energy efficient.
