Vegan wheat noodles with Shitake mushrooms


Fresh wheat noodles (you can substitute rice or udon noodles if preferred)
Garlic, 3-4 cloves, crushed and cut into fine pieces
fresh shitake mushrooms, destalked and sliced
Spring onions, 3-4, diced
Mushroom Oyster Sauce, 1-2 tablespoons
Peanut or Vegetable oil, 2 tablespoons
Black pepper (optional)
Shaoshing rice wine (optional)

Put oil in a frying pan or wok, put over a medium heat and brown the garlic

frying garlic in a frying panAdd the mushroom and spring onions and stir fry, increasing the heat to medium high. Add the mushroom oyster sauce and stir fry for 5 minutes

  1. Add black pepper and Shaoshing rice wine, if desired
  2. Add noodles to pan and mix with ingredients.

When well mixed, dish up on plate – it is enough for 2 small portions.
